Tomato and Artichoke Focaccia

Building a homemade pizza? Why not add some Mediterranean flavor? Olive oil, garlic, basil and feta cheese provide intense flavor, and the canned tomatoes deliver beta-carotene and lycopene, which add up to good nutrition!


  • Non-stick cooking spray
  • 1 container (10 ounces) refrigerated pizza dough
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon dried basil
  • 1 can (14 1/2 ounces) pasta-style chunky tomatoes, drained
  • 1 can (8 1/2 ounces) artichoke hearts, drained and quartered
  • 1 can (4 ounces) sliced mushrooms, drained
  • 8 ounces feta cheese, crumbled
  • 1/2 cup thinly sliced red or green bell pepper


  1. Heat oven to 425ºF.
  2. Lightly grease a 13x9-inch baking pan with cooking spray.
  3. Unroll pizza dough and press it evenly over bottom and about 1-inch up the sides of the prepared pan.
  4. Brush dough with olive oil and sprinkle evenly with garlic and basil.
  5. Cover with tomatoes, artichoke hearts, mushrooms, feta cheese and sliced pepper up to the edges of the dough.
  6. Bake the pizza for about 20 minutes until crust is golden brown.
